We are inspired to write this book following many wonderful hours sitting at tables with Cephalonian friends and relatives enjoying their magnificent cooking in the warm, relaxing atmosphere in one of the most beautiful islands of the Mediterranean. That’s the reason why most of the recipes have come from Sioras’ in the local community, who where thrilled by our British enthusiasm and eager to pass on their kitchen knowledge, expertise and traditions. Some recipes are preceded by little anecdotes, which reflect the humor and eccentricity, for which the Cephalonians are so well renowned. Cephalonian food is of course best enjoyed when visiting the beautiful island, but with this book it may be equally well savoured anywhere in the world.
